Maialen, one of the little girls I teach English, was in the UK last summer and tried peanut butter. I’ve mentioned before that it’s not something we really eat here but she likes the stuff and I always have some in the pantry for…just for eating, really (I like it in my oatmeal!) Since I’m not going to see her for a while I asked her to pick a flavour and I’d make her some cupcakes and, of course, she chose peanut butter.
So here we are!
Original recipe with chocolate, you know the drill. Core and fill. I made a peanut sauce with some peanut butter, oat milk and a little powdered sugar, I wanted it sort of thin so that it would soak the cupcake and keep it moist and yummy longer, while giving the chocolate base a peanutty flavour too.
Frost with a peanut buttercream and drizzle with more peanut sauce. I added a few chopped almonds for a little texture. They are TO DIE FOR. Specially if you have a peanut allergy.
